Spicy Tomato Sauce

A delicious sauce for kebabs/lamb/chicken/pasta.

Ingredients

  • 1 finely chopped onion

  • 1 garlic clove – finely chopped

  • 1 ½ tsp fresh ginger – finely chopped

  • ¾ tsp ground cumin

  • ½ tsp hot paprika

  • ¼ tsp ground cinnamon

  • ¼ tsp cayenne pepper (decrease to a pinch if a milder spicy heat required)

  • Small pinch of ground cloves

  • 1 ½ tbsp cider vinegar (or white wine vinegar)

  • 400g tin chopped tomatoes

  • 2tbsp light brown sugar

Directions

  • Cook onion, garlic, ginger and spices in 1 tbsp of oil, stirring until onion is soft. 
  • Stir in vinegar and simmer over a low heat for 1 minute. 
  • Add tomatoes and brown sugar – simmer for 45 minutes or more until thickened.
  • Allow to cool for 5 minutes and then blend to a smooth puree.
