1 ½ tsp fresh ginger – finely chopped
¾ tsp ground cumin
½ tsp hot paprika
¼ tsp ground cinnamon
¼ tsp cayenne pepper (decrease to a pinch if a milder spicy heat required)
Small pinch of ground cloves
1 ½ tbsp cider vinegar (or white wine vinegar)
400g tin chopped tomatoes
2tbsp light brown sugar
