Salmon Patties-Asian style

Ingredients

  • 500g salmon

  • 1 stick of Lemongrass – discard outer layer and finely chop

  • Thumb size piece fresh ginger – finely chopped

  • ½ bunch fresh coriander – chopped, except for a few leaves for decoration

  • 1 egg – beaten (optional)

  • 4 tsp Chilli jam

Directions

  • Combine the chopped lemongrass, ginger and coriander in a mixing bowl
  • Chop half the salmon into small chunks approx 1 cm and chop the remainder as finely as you can.
  • Add all the salmon to the lemongrass, ginger and coriander and mix thoroughly – a beaten egg can be mixed in at this point if you want your patties to be a little more firmly held together.
  • Divide into 4 evenly sized patties and fry in a teaspoon of oil for 2 minutes on each side or until just cooked through.
  • Add a teaspoon of chilli jam on top of each pattie in the frying pan, turn off the heat and turn the fishcake over to melt the jam. 
  • Immediately remove from frying pan and pour any remaining sauce over your patties.
