Ingredients

  • 2 cups Poha (flattened rice)

  • 2 tbsp oil

  • 2 tbsp raw peanuts

  • 1/2 tsp turmeric

  • 3-4 green chillies, chopped

  • 1 tsp mustard seeds

  • 1 tsp cumin seeds

  • 1 sprig curry leaves

  • 2 larges onions, chopped into medium chunks

  • 1 tbsp lemon juice

  • salt to taste

  • pinch of sugar

  • 1/4 cup coriander leaves, finely chopped

Method

  • Wash Poha (flattened rice) and leave in a strainer to drain.
  • Add oil to a wok – when hot, add mustard seeds.
  • When mustard seeds start to pop add the peanuts and green chillies – saute for 2 minutes.
  • Add cumin seeds, turmeric and curry leaves – saute for 1 minute.
  • Add onions and cook until onions are translucent.
  • Add salt, lemon juice, sugar and cook for a further minute.
  • Add the drained poha, mix thoroughly then cover the wok and cook for 2 minutes on a low heat.
  • Garnish the Poha with corianders leaves when serving.
